Maraviglia sits on a quiet hill in Monte San Savino, Tuscany — a landscape shaped by olive trees, open fields, and time.

The story goes that Maraviglia was named by ancient pilgrims traveling from France to Rome. When they reached this hill and looked around, they stopped in awe and said:

Che’ Maraviglia!” What a marvelous place.

Today, this same land continues to inspire everything we do.

Agricola Maraviglia is a small independent farm producing organic extra virgin olive oil and naturally fermented condiments.

Recognized as a Slow Food Presidia for our olive oil, our work began with the restoration of abandoned Tuscan olive groves — bringing ancient trees back into production and preserving a disappearing agricultural landscape.

Today, our focus has expanded into regenerative agriculture, with the goal of rebuilding soil health and restoring balance to the land.

All the grains and legumes used for our Miso, Tamari and Shoyu are grown directly on our six-hectare farm. They are part of a crop rotation system designed to support microbial life and improve soil structure in its first layers.

Our practices include no tilling, no external fertilizers, selective composting, and the use of humus teas produced from our two hectares of forest.

We farm with the understanding that soil is a living system — and that what we grow is only as good as the land it comes from.

At Maraviglia, everything begins with the land — and the olive trees are at the center of it.

Our organic extra virgin olive oil is produced from 1283 olive trees, cultivated on our farm and harvested early in the season.

Harvest begins in October, when olives are still green and naturally rich in polyphenols. They are picked by hand and cold-extracted within hours to preserve freshness, structure, and nutritional value. The result is a single-estate, early harvest olive oil that reflects the character of this place — vibrant, herbaceous, and alive.

Our farming practice is one where the past harvests the present.

We continue to benefit from the choices made by farmers centuries ago. Our role is to carry that knowledge forward — preserving the identity of our olive varieties and the integrity of this landscape for the future.

Agricola maraviglia is run by Francesco Piattelli

Maraviglia is the land I grew up on, climbing the olive trees at age five and picking olives off the trees. After college and years living in big cities, I felt the need to go back to my roots and reconnect with the land that raised me.

Returning home, I witnessed first-hand the fragmented Tuscan Olive Oil industry, along with the slow extinction of an ancient craft. Something had to change, and so I decided to apply my business background to what I knew and make it better.

With Agricola Maraviglia, my mission is to cement a new and sustainable way of producing Olive Oil, one that builds upon and honors past traditions. My hope is to share the lands of Maraviglia and the nourishing green gold it produces with the world––one bottle at a time.
