Maraviglia sits on a bucolic hill in Monte San Savino, Tuscany. The story goes that Maraviglia was named by ancient pilgrims traveling from France to the Vatican. When they stopped and looked around, they marveled at the beauty and serene energy of the place and said: “Che’ Maraviglia!” What a marvelous place.

 

 

Already a SLOW FOOD Presidia for its award winning Olive Oil, derived from the restoration of previously abandoned ancient Tuscan groves, Agricola Maraviglia is now focusing on becoming an example for soil regeneration. All the grains and legumes that we use for Miso, Tamari and Shoyu are grown on our 6 hectare property. They are part of a specific rotation program that aims at re-establishing a healthy and balanced soil by providing the correct microbial balance in the first layer of our grounds. Some of our practices include no tilling, no introduction of external fertilizers, selective composting and brewing humus teas from our 2 hectares of pristine forest area.

 

Here at Agricola Maraviglia we use a modern and meticulous approach to all phases of harvesting, which starts in early/mid October, obtaining an incredibly pure and fruity, quintessential Tuscan olive oil. Our 1283 organically cultivated olive trees are harvested early and by hand, then immediately pressed.

Our farming practice is one where the past harvests the present.

Today, we continue to benefit from the choices our farmers of the past made centuries ago. Our duty is to maintain this tradition and keep the ancient flavor of our olives viable for centuries to come. That’s why we abide by farming practice rooted in intention, connection, and respect for the land.

Maraviglia is the land I grew up on, climbing the olive trees at age five and picking olives off the trees. After college and years living in big cities, I felt the need to go back to my roots and reconnect with the land that raised me.

Returning home, I witnessed first-hand the fragmented Tuscan Olive Oil industry, along with the slow extinction of an ancient craft. Something had to change, and so I decided to apply my business background to what I knew and make it better.

With Agricola Maraviglia, my mission is to cement a new and sustainable way of producing Olive Oil, one that builds upon and honors past traditions. My hope is to share the lands of Maraviglia and the nourishing green gold it produces with the world––one bottle at a time.
