Growing and harvesting olive trees with the traditional Tuscan method has an intrinsic cost that most shelf-sold brands are unwilling to support.

This has led to a shift towards more industrialized farming techniques that directly undermine the landscape and economy of a hands-on harvesting tradition.

The booming, poorly regulated EVOO world-wide market has forced family-owned farms to abandon their groves due to sub-par and unfair compensation for their work.

The result: consumers are left with low quality, mixed and poorly processed olive oil, while simultaneously we are losing the knowledge of the land, appreciation for the trees, and respect for the purity of Extra Virgin Olive Oil.
