  • Slow, natural fermentation over time
  • Naturally rich, umami and complex
  • Single barrel, small batch production

The final touch every great meal deserves.

The Finishing Kit brings together the three essentials that define our pantry: our early harvest Extra Virgin Olive Oil, naturally fermented Tamari, and artisan Shoyu.

Each one brings something different to the table. The olive oil adds freshness and vibrancy. Tamari brings rich, rounded umami. Shoyu contributes depth, complexity and delicate sweetness through slow, natural fermentation.

From the olive groves to the fermentation room, every bottle begins on our organic farm in Tuscany. Different ingredients, one philosophy: farming with care, respecting time and crafting foods with real depth, character and origin.

Whether used individually or together, these are the seasonings that quietly transform everyday cooking—turning simple ingredients into memorable meals.

A simple introduction to the flavors of Maraviglia, made to be enjoyed often and shared around the table.

Why our Finishing Kit is different:

This Kit brings together the liquid expressions of our work: our Extra Virgin Olive Oil, Tamari, and Shoyu — each made slowly, in small batches, from organic ingredients grown and crafted in Tuscany.
Our olive oil comes from ancient groves we have restored and brought back into cultivation, while our fermented condiments are made from organic chickpeas and grains grown as part of a regenerative agricultural cycle on the farm. Though different in form, they share the same foundation: careful farming, respect for time, and a commitment to flavor with real depth and origin.
Rather than offering variety for its own sake, this kit is designed to let you taste the full logic of Maraviglia — from the brightness and vitality of fresh oil to the layered, savory complexity of slow fermentation.

Tasting notes

Each condiment in the kit offers its own expression of fermentation.

- Tamari: full-bodied, layered, and concentrated, with a long umami finish
- Shoyu: elegant, aromatic, and more fluid, with brightness and complexity
- Extra Virgin Olive Oil: vibrant, grassy, and complex, with notes of fresh herbs, green almond, and a balanced peppery finish

Tasted together, they reveal different textures, intensities, and uses — from soft and spoonable to delicate and finishing-focused.

How to use it

This kit is designed for tasting, experimenting, and everyday use.
- Use the Tamari to season rice, mushrooms, dressings, marinades, and cooked vegetables
- Finish dishes with the Shoyu where you want depth, salinity, and aromatic complexity
- Drizzle the Extra Virgin Olive Oil over warm bread, salads, beans, soups, or grilled vegetables to appreciate its freshness, structure, and aromatic complexity

Use them individually or together. A few drops of tamari or shoyu can sharpen the finish, and the olive oil can bring everything into balance.

Health benefits

Miso, Tamari, and Shoyu are traditional fermented foods known for their depth of flavor and their role in supporting gut health and digestive health. Through slow, natural fermentation, beneficial microorganisms help transform raw ingredients into more bioavailable nutrients.

When incorporated into a daily diet, fermented foods like miso, tamari, and shoyu can support digestion and help the body better absorb nutrients from other foods, contributing to overall well-being.

Naturally rich in enzymes and beneficial compounds, these ferments have long been part of traditional diets and are valued for their connection to a balanced, gut-friendly lifestyle.

At Maraviglia, our ferments are crafted in small batches using organic Tuscan chickpeas and grains, following a slow process that preserves both nutritional integrity and flavor.
